Chocolate Espresso Brownies!!!!!






I have not blogged in a while!!!!! I have been busy in my kitchen creating new recipes. It took me 3 times to perfect my brownie recipe for the taste and texture I wanted. This recipe is free of Gluten-Dairy&Eggs as most of my recipes are unless noted. If you have a chocolate craving here is your medicine!!!!!

Prep Time: 15 Minutes

Bake Time: 30-35 Minutes

Tools:   2 medium bowls
               Whisk
               Rubber Spatula
               Small heatproof bowl
               8 x 8 baking pan ( lined with parchment)

Preheat your oven to 350 degrees

Dry Ingredients:    1 Cup brown rice flour
                                1/4 Cup Sorghum flour
                                1/4 Cup Cocoa powder       
                                2 Tbsp Tapioca flour
                                1/2 tsp Salt
                                1/2 tsp Baking Soda

Wet Ingredients:      3.2 oz Dark Chocolate  (melted) 70% or higher
                                  1/2 Cup Hot Espresso (or coffee)
                                  2 Flax eggs  ( 2 Tbsp ground flax  + 6 Tbsp warm water)
                                  2/3 Cup Agave Nectar
                                  1/2 Cup Unsweetened applesauce
                                  1/4 Cup Almond milk
                                  1.5 tsp Vanilla
                                  1/2 Cup Vegan chocolate chips or cocoa nibs (optional)

Note: I have not made these with walnuts...but I"m sure they would be fabulous!

Directions:


1. Mix dry ingredients in medium bowl and set aside

2. Make Flax eggs and set aside for 10 min

3. Melt chocolate in heatproof bowl in microwave ( or double broiler)

4. Brew 1/2 Cup of strong coffee or espresso ( I used Instant espresso powder) set aside


5. Mix wet ingredients except the coffee

6. Mix dry ingredients with wet, then pour hot coffee and mix well

.



Bake for 30-35 minutes (Top will crack a little)


Let COOL 30-40 minutes. I refrigerated mine a few hours so they are easier to cut! Enjoy!
